Dear Remo,

My wife Tina and I returned home to the United States last week and I wanted to take the time to thank you for the wonderful stay we had at your hotel. Your sincere hospitality was a breath of fresh air.

We traveled all over Scotland from Glasgow to Perth then to Montrose, St. Andrews, Ballatar, Inverness, Oban, and then back to Glasgow. Though we stayed at some very nice hotels and ate at some excellent restaurants throughout our trip, I wanted to make a special point to let you know your hotel was clearly the best, and the dinner we had the one night we ate there was outstanding, far surpassing every meal we had in Scotland.

Even here in Beverly Hills, where there are some of the best restaurants in the United States, the dinner we had in your restaurant is on par with, and in some cases better than, the best of these restaurants, to include Wolfgang Puck's Spago, the Ivy, Chaya Brasserie, Ago, and many others. It was funny, at every dinner we compared the meal to the "Remo gold standard" and every time the dinner fell short and left us wishing we were back at your restaurant.

In Ballatar, Inverness and Glasgow we had dinner at five-star restaurants. Even though the dinners were more expensive, they were nowhere near as exquisite and succulent as the meal you prepared for us that one night. No kidding. I had the lamb and my wife had the filet mignon. As I mentioned to you before, I am a bit particular with my lamb. My father, being from southern Italy, is the only one I know that can make lamb to my liking...that is, until I ate your lamb. Anyway, I just got off the phone with a business associate of mine who was recommending a trip to Scotland for his parents.

I told him to talk with me further and I would give him my recommendations on where to stay and where to eat. It goes without saying that your hotel will be at the top of my list. As for Tina and I, we will definitely be going back to Scotland and we look forward to staying at the Sunbank House Hotel.
